As a busy mom, I know how important it is to find creative ways to prep meals for the kiddos and yourself when you’re feeling stretched for time. There are those days when I struggle to come up with something delicious and healthy for my son that also won’t take an hour to prep. Below are a few simple easy recipes that are my go-to when I need to quickly whip up a meal for my son in pinch.
- Bean quesadilla with a side of steamed veggies. This is my all time favorite busy mom recipe that never fails. It literally takes less than 5 minutes to prep. My son loves this easy and simple recipe and it makes me happy to know that he’s being fed a nutritious meal.
- Avocado toast with hard boiled egg. Avocado is a hit or miss with my son, most likely due to the smushy texture. But when I smash up the avocado and put it on toast with a little bit of mayonnaise and hemp seeds, he loves it! I also add a hard boiled egg on the side for additional protein and iron. This is a new meal that I’ve recently added to the menu for him and he’s enjoying it so far. A huge bonus that it takes literally just a few minutes to make! A win-win all around.
- Bolognese with ravioli. This recipe is my go-to dinner meal when I’m feeling like whipping up something quick and nutritious. I stir-fry some mushrooms, onions and ground beef and then toss in some of our favorite marinara sauce. We’ll then add it on top of our son’s favorite pasta, either butternut squash ravioli or chickpea pasta for additional protein.
- Mac and cheese with broccoli and chicken. Another huge hit with my son! He loves the Banza Mac & Cheese made with gluten-free chickpea pasta. I’ll toss in some peas or broccoli with grilled chicken to make it a well-balanced meal.
- Grilled cheese sandwich with tomatoes. Another great lunch recipe that can easily be made in less than 10 minutes. This quick easy recipe calls for a couple slices of bread, butter and shredded cheese. You can pan fry this over a skillet with melted butter. Add in some of your little one’s favorite veggie to make it a balanced meal!
